Cucumber & Tomato Salad with Balsamic Shallot Reduction

This wonderful salad can be served at any time, but is guaranteed to impress your guests at your next party. INGREDIENTS • 1 large tomato, sliced • 1 large cucumber, sliced • 1 cup baby spinach • 1/4 cup balsamic vinegar • 1 shallot, sliced • 1T olive oil • salt and pepper to taste Place the balsamic and shallots in a small sauce pan on high heat and bring to a boil.
